Making Orca salsa is a great chance to talk about the benefits of eating local organic foods. Our tomatoes are organic, local, and delicious. They are free, require no gasoline to produce, and they are even watered with reclaimed water collected from our roof and dumped into our 9,000 gallon underground water cistern.
It is a great way to start the year and most students have a great time (a few can’t stand vegetables, but we are workin’ on them!).
